How to make honey lollipops without sugar?

Step 1: Pour the honey into the pot.
Step 2: Make sure the candy thermometer's bottom tip is in the honey solution.
Step 3: Cook the honey up to the hard crack stage, which is 295 to 309 degrees Farrenheit and 146 to 154 degrees Celsius.
Step 4: Pour the candy into a candy mold (hard candy molds are different from chocolate molds as it has to be more resilient to high temperatures).
Step 5: Cool the honey solution at room temperature. Do not put the lollipops in the refrigerator as it will become unstable. Typical cooling times range from 10-15 minutes.
Step 6: Enjoy!
